Bianchi Winery: Heart, Heritage & Hand-crafted Wines
This Fall, Wino Bottle Club is thrilled to feature Bianchi Winery — a Paso Robles gem with deep family roots and a genuine love for California wine country. The story begins back in the 1970s with the Bianchi family’s first vineyard, a small father-and-son dream that eventually pulled them toward Paso Robles in search of better terroir and a place to create something truly special. When Glenn Bianchi found their now-iconic 40-acre property on the east side of Paso in 2000, he knew it was home. Today, Glenn’s son Beau Bianchi is carrying the family legacy forward, blending his own vision with the family’s passion for hospitality, quality, and a whole lot of heart.
A huge part of that heart comes from winemaker Todd Weiher, who has had his hands on every Bianchi vintage since 2008. Todd brings a “dirt-up” approach to the cellar—focusing on the quality of the fruit, working closely with growers, and letting each region’s character shine through. His science-driven background, decades of Central Coast experience, and dedication to continual learning have helped shape Bianchi’s signature style: clean, expressive, beautifully balanced wines made with purpose.
The Bianchi estate is known for its warm welcome—think rolling vineyards, a peaceful lake, and a tasting room designed for lingering—and that spirit shows up in their wines, too. Everything they make is rooted in thoughtful, hands-on winemaking. They work with select vineyard sites across California, choosing spots that bring out the best in each varietal. From coastal pockets in Monterey and Santa Barbara that produce clean, vibrant, and refreshing whites, to the warmer hills of Paso that deliver bold, rich, and velvety reds, Bianchi leans into each region’s strengths to craft beautifully balanced, approachable wines. From a cozy night in to holiday hosting, these are wines made to enjoy and share!
As a special element to our winter feature, we are showcasing two of Bianchi’s limited release Ivy Lee wines, named after Beau’s daughter, who albeit young, off all his children, has shown the most interest in the winemaking world and has already been touted for her keen nose. These distinct wines highlight what Bianchi Winery does best: crafting reds that are generous, expressive, and deeply rooted in place. Todd’s minimalist, acid-loving winemaking style pairs beautifully with Paso Robles fruit, giving these reds both richness and lift—exactly the combination Paso does best.
While Bianchi isn’t loud about sustainability buzzwords, their farming and production style reflects a deep respect for land and fruit—small-lot winemaking, responsible vineyard sourcing, and a quality-first mindset. Under Todd’s lead, the winery has even introduced an owl box program on the estate, using natural predators to help protect the vines and reduce the need for intervention. It’s a simple yet impactful step that reflects Bianchi’s philosophy: care for the land, and it will care for the wine.
